Che cos'è la catena del freddo?

 

E' la continuità del freddo durante tutti i passaggi degli alimenti surgelati dalla produzione al consumo. Ogni anello di questa catena (depositi frigoriferi, trasporti, banchi frigoriferi nei punti di vendita) deve mantenere sempre una temperatura non superiore ai -18°C.
